Foodie Friday: Low Carb Chocolate Chip Cookies

Friday, July 13, 2018

I have been doing the keto diet, I'll get more into that in another post once I've been doing it for a couple of months. With that said, I've been trying to eat healthier and find different alternatives for the things I love. I love a good sweet treat so giving up traditional chocolate chip cookies has been hard. I went on the hunt for the BEST keto chocolate chip cookie recipe I could find. My go-to is always pinterest and I found this recipe here from the Meaningful Eats Blog. She has tons of great Vegan and Gluten-free recipes that are super easy to follow. Be sure to check out her blog for more recipe ideas. I've made these cookies on several occasions and my family loves them and they were a hit at work. If you try these out be sure to tag me so I can see them!

  • 1/2 cup butter, softened
  • 1/4 cup coconut oil
  • 3/4 cup brown sugar or coconut sugar
  • 2 teaspoons vanilla extract
  • 2 large eggs
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3 cups blanched almond flour
  • 1 1/4 chocolate chips of choice

  • Preheat oven to 350 degrees. Line a baking sheet with parchment paper.
  • In the bowl of a stand mixer, cream together the butter, coconut oil, and brown sugar. Add the vanilla and eggs, mixing until incorporated.
  • Mix in the baking soda and salt. Add the almond flour, 1 cup at a time, beating well after each addition. Fold in the chocolate chips and walnuts with a wooden spoon.
  • Form the dough into tablespoon rounds and place on the lined baking sheet about 3 inches apart. Bake for 11-13 minutes, or until golden brown around edges. Cool and enjoy! These cookies are best enjoyed the day they are baked
