Foodie Friday: Lemon Garlic Shrimp Scampi

Happy Friday!! After the week I've had I am looking forward to the weekend. I've got outfits to shoot and I'm taking my little brothers to go see the Incredibles 2!! I've waited a long time for this, so I'm probably more excited to see this show than they are! LOL On Fridays I don't like spending a bunch of time cooking if at all, so I like to find things that are quick! This 10-minute Lemon Garlic Shrimp Scampy from the blog "Eating on a Dime" is perfect for your Friday night. You can substitute the angel hair pasta for zoodles like I will!


Ingredients
  • 2 tablespoons of butter (or coconut oil)
  • 1 lb of shrimp (not frozen, needs to be thawed)
  • salt and pepper to taste
  • 1 tablespoon of garlic salt
  • 1 lemon, freshly squeezed
  • ½ cup of chicken broth (or you can use water)
  • 2 tablespoons of fresh parsley
  • freshly grated parmesan cheese
  • 8 oz of angel hair pasta

 
Instructions
  1. In a large pot of boiling water cook angel hair (or spaghetti) pasta according to directions.
  2. Melt butter in a large skillet over medium high heat.
  3. Add shrimp, salt and pepper, garlic salt. Cook, stirring occasionally until the shrimp turns pink. About 2-4 minutes.
  4. Stir in lemon juice and chicken broth (you can use water). Bring to a simmer.
  5. Stir in fresh parsley and parmesan cheese.
  6. Toss with angel hair pasta and garnish with more parmesan and parsley. Serve immediately.
